Try This Healthy Guacamole For Your Cinco de Mayo Fiesta

Cinco de Mayo

Cinco de Mayo is a celebration of Mexico’s victory over French forces on May 5, 1962.

For many of us, we are celebrating the courage to make better food choices, finding time to exercise and manage our weight.

In honor of this resolve, we thought it would be fun to share this delicious guacamole recipe with you.

Try it with organic blue corn chips, or for something new, use nut chips made from almonds.

Ranch Guacamole 


Ranch Guacamole

1 C frozen peas
1 ripe avocado
1 lime, juiced
1 chopped Roma tomato
1/2 C finely chopped red or sweet onion
1 chopped jalapeno pepper
or 1 tsp. pepperoncini
2-3 garlic cloves finely chopped
3 tbsp. chopped fresh cilantro
1/2 tsp sea salt
1/4 tsp black pepper

1. Slightly thaw frozen peas at room temperature.

2. Place peas in a blender or food processor; process until smooth. Set aside.

3. Mash avocado with a fork or potato masher in a medium bowl. Add in the lime juice, tomato, onion, jalapeno, garlic, and cilantro. Season with sea salt and black pepper. Add prepared peas and mix well.

4. Cover tightly and refrigerate for several hours. Serve with an array of fresh vegetables such as bell pepper strips, jicama, summer squash, and cherry tomatoes.

Variation: You can also use steamed broccoli florets, asparagus tips, or edamame in place of the peas.
